Dwutta is the proper name for what’s more commonly sold as Blackbutt honey — harvested from Eucalyptus todtiana, the coastal blackbutt tree found along Western Australia’s sandy coastal heathland. It flowers over a short window each summer, and the honey it produces is some of the darkest and most distinctive in the state.
This batch carries a TA25+ rating. TA (Total Activity) measures a honey’s natural antibacterial strength under laboratory conditions; a TA25+ result sits well above the TA10+ threshold generally used to distinguish an “active” honey from a standard table honey.
Expect dark amber, almost black in the jar, with aromas of bush blossom giving way to molasses, dark treacle and a faint roasted-coffee bitterness that keeps the sweetness in check. It’s a thick, syrup-like honey, better suited to a teaspoon than a squeeze bottle – good stirred into strong tea or coffee, where its own bitterness has something to talk to.
