Floral Source: Jarrah / Eucalyptus marginata
Our honey is graded by activity – a lab measure of its natural antibacterial strength, tested batch by batch. Most use the old phenol test. AAV is the newer, more precise assay. We do both tests on every batch.
What AAV Means, and Why It’s on Every Jar
Most honey brands quote one number and stop there. Pure Cure quotes three, and tells you why.
For decades, antibacterial strength in honey has been measured using the phenol equivalent (PE) method – the test behind the “TA” ratings you’ll see across the category. It’s a reasonable test. It’s also an old one, and it has a ceiling: past a certain strength, phenol’s own solubility limits what the test can accurately read.
AAV – Antibacterial Activity Value – is the newer assay.
It uses a broth-dilution method instead of a phenol comparison, developed and peer-reviewed to give a more precise reading with no upper limit. Where the old test starts to lose accuracy at the high end, AAV keeps measuring.
MGO – Methylglyoxal – is different again.
It’s the specific compound most closely linked to non-peroxide antibacterial activity in bioactive honey. Rather than running a separate chemical assay on every batch, we apply the correlation between TA and MGO established in peer-reviewed research (Cokcetin et al., 2016, PLOS ONE) to give you a scientifically grounded MGO equivalent alongside our tested TA and AAV figures.
Pure Cure tests every batch for TA and AAV, and provides an MGO equivalent based on that published research. TA is what the category already knows how to read, AAV is the sharper instrument, and the MGO figure gives you a third, familiar reference point – all three, side by side, on the same label.
