TA35+ Jarrah Honey

Dark, slow-set and rich in natural antibacterial activity, our TA35+ Jarrah honey comes from a tree that flowers once every two to four years — poured only when it does.

Jarrah honey is harvested from the nectar of Eucalyptus marginata, the towering hardwood that gives Perth’s Darling Range its name. The jarrah tree flowers irregularly — sometimes just once every two to four years, and only when the season cooperates — which is why genuine, independently-tested Jarrah honey is one of the rarer honeys to find on a shelf.

Our Jarrah honey carries a TA35+ rating (Total Activity), the measure used specifically for Western Australian bioactive honeys — the regional equivalent of the MGO scale used for Manuka. TA is tested directly against the honey’s effect on bacteria in laboratory conditions, and a TA35+ result places this batch in the premium-grade range for natural antibacterial strength.

In the jar, it’s dark amber bordering on black, with a deep caramel and treacle flavour. Jarrah’s naturally low glucose content means it resists crystallising the way lighter honeys do, so it stays smooth and pourable for longer. Stir it through warm (not boiling) tea, drizzle it over yoghurt, or take it straight off the spoon — Jarrah is strong enough in flavour to stand on its own.
